    Oahu has the most diverse scene with everything from $8 plate lunches to Michelin-worthy tasting menus. Maui brings celebrity chef firepower. The Big Island has Kona coffee and the best farmers market in the state. Kauai is small but punches way above its weight with incredible local spots.

    Essential Hawaiian Dishes to Try Anywhere

    No matter which island you visit, these dishes define Hawaiian cuisine.

    • Poke — Fresh ahi tuna cubed with soy sauce, sesame oil, and onions. The real thing bears no resemblance to mainland poke.
    • Plate Lunch — Protein (kalua pork, teriyaki chicken), two scoops rice, macaroni salad. Hawaii's essential meal.
